The Hatco FSHC-17W1 is a mobile food holding cabinet that can accommodate 17 sheet pans or 34 steam table pans of precooked food. It is made with a stainless steel body and a durable Lexan door, making it easy to maintain. The cabinet has a wide temperature range of 80 to 200 degrees Fahrenheit, allowing for dough proofing as well as food holding. The door features a magnetic latch and field-reversible plated hinges. It has a gasket that runs the entire perimeter to prevent heat loss and cold air from entering. The insulation on the door, sides, bottom, top, and control panel helps to maintain consistent temperatures. The cabinet also has a water chamber that can hold up to 2 gallons of water to humidify the interior and prevent food from drying out. The unit is equipped with thermostatic controls for both heat and humidity, and it can be easily moved around with its 5" casters.
