This mobile CVap® Holding/Proofing Cabinet is half-size and insulated. It is designed for convection holding and can accommodate either (5) 18" x 26" sheet pans, (10) 13" x 18" sheet pans, or (10) 12" x 20" hotel pans. Each rack has a load limit of 65 lbs (29.25 kg). The cabinet features a field reversible hinged solid door with a magnetic door handle. It is equipped with a C-Touch control with a processor, allowing for HACCP temperature downloads. The cabinet also has USB and audio ports. Water can be manually filled. Both the interior and exterior of the cabinet are made of stainless steel. It is CE, UL EPH ANSI/NSF4, cUL, and UL-Sanitation certified.
