The CVap® Holding/Proofing Cabinet is a mobile, half-size cabinet that is insulated and designed for convection holding. It can accommodate either (5) 18" x 26" sheet pans, (10) 13" x 18" sheet pans, or (10) 12" x 20" hotel pans. Each rack has a load limit of 65 lbs (29.25 kg). The cabinet features a field reversible hinged solid door with a magnetic door handle. It also has a membrane control panel with HACCP temperature downloads and a USB port. The cabinet uses CVap technology and has a manual water fill. Both the interior and exterior are made of stainless steel. The cabinet is CE, UL EPH ANSI/NSF4, cUL, and UL-Sanitation certified.
