This is a mobile, half-size holding and proofing cabinet called CVap® Holding / Proofing Cabinet. It is designed to be placed under the counter and is insulated for efficient operation. It uses convection holding technology to keep food warm and fresh. The cabinet can accommodate either (4) 13" x 18" sheet pans or (4) 12" x 20" hotel pans. Each rack has a load limit of 65 lbs (29.25 kg). The cabinet features a field reversible hinged solid door with a magnetic door handle for easy access. It is equipped with a C-Touch control with a processor, allowing for precise temperature control. The cabinet also has HACCP temperature downloads, USB, and audio ports for convenience. It has a manual water fill system and is made of stainless steel both on the interior and exterior. The cabinet is CE, UL EPH ANSI/NSF4, cUL, and UL-Sanitation certified.
