This mobile CVap® Holding/Proofing Cabinet is half-size and insulated. It is designed for convection holding and can accommodate either (5) 18" x 26" sheet pans, (10) 13" x 18" sheet pans, or (10) 12" x 20" hotel pans. Each rack has a load limit of 65 lbs (29.25 kg). The cabinet features a field reversible hinged solid door with a magnetic door handle. It is equipped with a C-Touch control with a processor, allowing for HACCP temperature downloads. The cabinet also has wireless programming capabilities and USB and audio ports. It has an on/off fan control and a manual water fill. The interior and exterior of the cabinet are made of stainless steel. It is CE, UL EPH ANSI/NSF4, cUL, and UL-Sanitation certified.
