The Cook/Hold Cabinet is a double-deck, mobile unit with mechanical temperature controls. It comes with (6) wire shelves and has the capacity to hold (16) sheet pans or (32) hotel pans. The cabinet is made of stainless steel construction and has 5" casters, with 2 swivel casters that have locks and 2 rigid casters. It requires 2 outlets.

Some of the standard features of this cabinet include a lifetime warranty on heating elements, a stackable design for additional capacity, the ability to hold temperatures from 100°F to 190°F, and field reversible doors with predrilled holes. It can also cook at temperatures from 100°F to 250°F and has dual voltage 208/240, single phase, 50/60hz.

The oven can be used to rethermalize foods and has an integrated steel frame for maximum rigidity and strength. It comes complete with a cord and plug (NEMA 6-30) for each unit and has simple, reliable controls and thermostat for durability and ease of use. The oven cooks by time and automatically converts from cook cycle to hold cycle.

Both the interior and exterior of the oven are constructed of dent resistant 20 gauge stainless steel. It is fully insulated with 2" of insulation in the top and 1 1/2" in the sides, back, and bottom. The oven has a magnetic action door latch and heavy-duty hinges secured to the internal frame. It also comes with 5" heavy-duty casters (2 swivel with brakes and 2 rigid) in a kit for field installation.

The oven is provided with three wire shelves for cooking, and adjustable tray slides are available as an accessory. It has a low-speed fan that provides even heat distribution and natural browning without additives for color. The oven control features an on/off switch and knobs to set cooking time, cooking temp, and hold temp.

The Cook and Hold Commercial Oven has a capacity for eight 18" x 26" sheet pans or sixteen 12" x 20" steam table pans on 3" centers in each compartment.

Some accessories available for this oven include a stacking kit, additional wire shelves, and an adjustable tray slide kit.
