The Cook/Hold Cabinet is a single deck, mobile unit with electronic solid state controls. It features an easy-to-operate knob for temperature control and natural browning. The cabinet has a capacity of 5 bun pans or 10 steam table pans. It has a stainless steel interior and exterior and is equipped with 5" casters (2 swivel with locks, 2 rigid). The unit operates on 208-240v/50/60/1-ph and has a power output of 1900/2530 watts and 9.6/11.0 amps. It comes with a cord and NEMA 6-15P plug. 

The Cook/Hold Cabinet has several standard features including a removable control/power module, a lifetime warranty on heating elements, and the ability to hold temperatures up to 250ºF and cook at temperatures up to 350ºF. It comes with 2 wire pan grid cooking racks and an integrated steel frame for maximum strength. The unit can also be used to rethermalize products. 

Additional features include dual voltage capabilities (208/240 volt, single phase, 50/60 Hz), full insulation (2" in top and 1" in sides and bottom), and 5" heavy duty casters. The controls can be programmed with nine custom programs and the interior and exterior are constructed out of 20 gauge stainless steel. The unit has a magnetic action door latch and heavy duty hinges secured to the internal frame. It also comes with 3 pairs of removable universal tray slides adjustable on 1 1/2" centers. 

The Cook/Hold Cabinet has a low speed fan for even heat distribution and natural browning of meat products. The knob style controls set the cooking time, cooking temperature, and holding temperature. The digital LED display shows time in minutes, hold temperature, cook temperature, and cabinet temperature. The oven has a capacity for five 18" x 26" sheet pans on 3" centers or ten 12" x 20" x 2 1/2" steam table pans. 

Optional features include a stacking kit, left hand hinged door, additional cooking racks, and additional universal tray slides. The Vulcan Model No. VCH5 Cook and Hold Oven is a versatile and durable unit that is perfect for commercial kitchens.
