The C5™ 3 Series Moisture Heated Holding & Proofing Cabinet is a mobile, full-height cabinet with grey Insulation Armour™. It features Dutch insulated aluminum doors and a removable bottom mount control module. The thermostat can be set to a maximum temperature of 200°F and also has moisture control. The cabinet has fixed wire slides on 3" centers, with a capacity of either 18" x 26" pans or 12" x 20" x 2-1/2" pans. It is equipped with 5" casters, two of which have brakes. The cabinet is made of aluminum and operates on 120v/60/1-ph with 2000 watts and 16.7 amps. It is cULus and NSF certified.
The standard features of the C5™ 3 Series Moisture Heated Holding & Proofing Cabinet include three slide styles for maximum holding capacity, the option to choose between high wattage or low wattage models, reliability and durability, and fast heat-up and recovery through a thermostatically controlled, forced convection system. The cabinet is available in red, blue, or gray Insulation Armour™, with other colors available upon request. The Insulation Armour™ is made of durable polymer construction that is dent, impact, and stain resistant. It also has molded-in hand holds for easy mobility.
The cabinet can be configured with either solid insulated aluminum doors or clear polycarbonate doors. Full height cabinets can have full length or dutch-style doors. Clear doors provide visibility of the contents without losing heat. The control module options include Holding, Moisture, and Combination Proof and Hold. All modules have an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. They are also removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
