The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, full-height insulated cabinet with a removable bottom mount control module. It has a thermostat that can reach up to 200°F and can hold up to 35 18" x 26" pans on lip load slides. The cabinet is made of aluminum and has 5" casters, with 2 of them having brakes. It operates on 120v/60/1-ph and has a power rating of 1440 watts and 12 amps. It is cULus and NSF certified.
Some standard features of the cabinet include three slide styles for maximum holding capacity, the option to choose between high or low wattage models, reliability and durability, and fast heat-up and recovery through a thermostatically controlled, forced convection system. The cabinet is available in different colors and has patented insulation technology called Insulation Armour™, which retains heat, saves energy, and provides a cool-to-touch exterior. The doors can be solid insulated aluminum or clear polycarbonate, and the control module is removable without tools and allows for future upgrades.
There are also various options and accessories available for the cabinet, such as a travel latch, 6" casters, small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, flush door latch, stainless steel universal slides, and different types of plugs and slide pairs.
The cabinet is made of high-density polyethylene (HDPE) for insulation, has a smooth polymer drip trough with a catch pan, high-temperature Santoprene gaskets, molded hand holds on all four corners, polymer high-strength magnetic pull latch with lever-action release, field reversible double hinged doors, clear or solid doors with aluminum frames, and four casters with neoprene wheels and brakes. The holding modules are removable without tools and have a digital thermometer, recessed control dials, master on/off switch, "Power On" light, water pan, and a ball bearing blower forced air system.
