The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, full-height cabinet with a clear polycarbonate door. It has a removable bottom mount control module and a thermostat that can reach temperatures up to 200°F. The cabinet can hold up to 35 pans measuring 18" x 26" and has lip load slides on 1-1/2" centers. It is made of aluminum and has 5" casters, two of which have brakes. The cabinet operates on 120v/60/1-ph and has a wattage of 1440 watts and 12 amps. It is cULus and NSF certified. The cabinet comes with several standard features including three slide styles for maximum holding capacity, the option to choose between high or low wattage models, and reliability and durability built into its design. It also has a fast heat-up and recovery system and is available in different colors. The cabinet offers options and accessories such as a travel latch, 6" casters, a small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, a flush door latch, stainless steel universal slides, and different plug options. The cabinet is made of high-density polyethylene (HDPE) insulation armor and has a smooth polymer drip trough with a catch pan. It has high-temperature Santoprene gaskets, molded hand holds, polymer magnetic pull latches, and field reversible double hinged doors. The clear doors are made of extruded aluminum with a polycarbonate window, while the solid doors are fully insulated with fiberglass and aluminum. The cabinet has four casters with neoprene wheels and a ball bearing blower forced air system. The holding modules are removable without tools and have a digital thermometer, recessed control dials, a master on/off switch, a power indicator light, a water pan, and a ball bearing blower forced air system.
