The Groen BPP-30EC Braising Pan is a medium-sized electrically heated, power tilt unit that is highly valued in kitchens that handle large quantities of food. If your establishment does a lot of batch cooking, this braising pan should definitely be considered. It is versatile and can be used for a wide range of dishes, from soups to sandwiches, steaks to pancakes. Despite its 30-gallon capacity, it has a compact footprint, measuring 38 ½" wide by 39 ¾" front to back.
The pan itself is 10" deep, 26 ¼" wide, and 28 ¼" long. The interior is emery polished to a 100 grit finish, which prevents food from sticking and reduces cleaning time. The 3" radius corners make it easy to move food around, and the single-piece 304 stainless steel construction of the corners ensures optimal sanitation. The cooking surface is made up of a ⅜" thick plate clad with stainless steel, ensuring even heat distribution thanks to the electric flat bar heating elements.
The Groen BPP-30EC Braising Pan features a power tilt mechanism, allowing for easy and precise pouring of cooked products. The tilting action is controlled by a 3-position switch, conveniently located on the IPX6-rated stainless steel control panel. The control panel also includes a power switch with an indicator light, a temperature control knob (ranging from 175 to 400°F), a heating indicator light, and the aforementioned 3-position tilt switch. In case of a power outage, there is a manual override for pouring the contents out of the pan.
With its thermostatic control, the Groen BPP-30EC minimizes the risk of overheating or burning food. It automatically turns off when the target temperature is reached and switches back on when it falls below that temperature. For safety purposes, all Groen tilting braising pans come with a high limit thermostat.
The exterior of the braising pan is made of stainless steel with a #3 finish, making it easy to maintain. It stands on a round tubular open leg base, allowing for easy access and cleaning underneath and around the unit. The four legs have adjustable bullet feet to ensure stability on uneven floors. Additionally, the unit comes with a bracket that allows for the installation of a faucet on the left, right, or right rear of the unit.
