The Groen BPM-30EA Braising Pan is a medium-sized electric model with manual tilting and advanced controls. It is ideal for medium to large establishments that require large batch cooking. Despite its size, it can fit in almost any kitchen with its 38 ½" wide and 39 ¾" front to back footprint. This versatile unit can be used for a variety of cooking tasks, from making a huge batch of soup to heating multiple sandwiches at once. The cooking surface of the pan is a thick 5/8" stainless steel clad plate, ensuring even heat distribution with no hot or cold spots. The interior of the pan is made from a single piece of corrosion-resistant 304 stainless steel, and the rounded corners have a 3" radius. The entire inside of the pan is emery polished to 100 grit, making it easy to cook in and clean. The control panel of the BPM-30EA is IPX6-rated and offers advanced features. It allows you to adjust the temperature between 175 and 400°F and set the cooking time between 1 minute and 10 hours. This ensures precise and repeatable cooking, even in a busy kitchen. The control panel features an LED readout for temperature or cook time, a power switch with an indicator light, a knob for temperature and time settings, a heat indicator light, buttons for low and high temperature presets, a manual mode button, and a timer set button. The temperature in the pan is thermostatically controlled, automatically turning off the heat when it reaches the set high temperature and turning it back on when it reaches the set low temperature. Safety is ensured with a high limit thermostat. The exterior of the pan has an aesthetically pleasing and easy to clean #3 finish, maintaining its appearance for years. It is mounted on an open leg stand, allowing easy access for cleaning. The pan is level with adjustable bullet feet on all four tubular legs. A mounting bracket is included for installing an optional faucet on the left, right, or rear right of the pan. The pan can be tilted at a 7-degree angle for griddling, controlled by a manual hand crank. The worm-and-gear mechanism ensures smooth and precise tilting, with the pan reaching the full vertical position in 24 turns. For easy cleaning, the pan can be tilted past the full vertical position.
