Electric kettle/mixer with a 40-gallon capacity and a 2/3 steam jacket design. It features a sweep/fold agitator, tilt-type mechanism, and variable speed control. The kettle is made of stainless steel and has an open leg base. Other standard features include a large pouring lip, hot and cold water faucets, and a solid state low water safety control. It also has a safety device to prevent high-speed starts and level adjustable feet. The kettle has gallon markings stamped into the scraper shaft and a 50 psi safety valve. It is approved by UL, CSA, CE, NSF, and ASME. The kettle has a 2" tangent draw-off valve with a drain strainer and an infinitely variable scraper speed control. The agitator and scraper are bayonet mounted for easy removal. It operates on standard 208-240 volts, 60 Hz, 3 phase, 4 wire, high wattage. The kettle has a solid state temperature control for precise simmering and a rear mounted pressure/vacuum gauge and pressure relief valve. The agitator, scraper, and bridge lift are powered by a 3 horsepower hydraulic system. The nylon blades are removable without tools and scrape the entire jacketed surface. The kettle has an enclosed, hydraulically operated mixer bridge made of 10 gauge stainless steel. All plumbing, electrical, and hydraulics are enclosed in stainless steel consoles. The steam jacket is filled with treated water and does not require venting or refilling. The tilt mechanism is made of roller bearings and a self-locking worm and segment gear. The kettle has an infinitely variable ratio between the scraper and agitator, with the agitator rotating from 0-8 times the speed of the scraper. Optional accessories include covers, power tilt, leg extensions, pan carrier, flow diverter, food strainer, swing funnels, alternate mounting systems, different voltages, product time/temperature controls and indicators, water meter, type 316 stainless steel interior, and a kettle accessory kit. The kettle accessory kit includes a ladle, draw-off brush, clean-up brush, commercial kettle whip, kettle brush, and kettle paddle.
