Electric kettle/mixer with a sweep/fold agitator and a 100-gallon capacity. It features a 2/3 steam jacket design, tilt-type mechanism, and variable speed control. The kettle/mixer also includes a hot and cold water faucet, a 2" tangent draw-off valve, and an open leg base. It is constructed with stainless steel and has standard features such as a large pouring lip, no water gauge required, and a mixer stop when the bridge is lifted. Safety features include a solid state low water safety control and a device that prevents high-speed starts. The kettle/mixer has level adjustable feet, gallon markings stamped into the scraper shaft, and a 50 psi safety valve and steam jacket rating. It is approved by UL, CSA, CE, NSF, and ASME. Other features include an infinitely variable scraper speed control, bayonet mounted agitator and scraper for easy removal, and a solid state temperature control for perfect simmering. The kettle/mixer also has a rear mounted pressure/vacuum gauge and pressure relief valve. It is powered by a 3 horsepower hydraulic system for the agitator, scraper, and bridge lift. The nylon blades are removable without tools and scrape the entire jacketed surface. The kettle/mixer has an enclosed, hydraulically operated mixer bridge made of 10 gauge stainless steel. All plumbing, electrical, and hydraulics are enclosed in stainless steel consoles. The steam jacket is filled with treated water, eliminating the need for venting or refilling. The tilt mechanism is made of roller bearings and a case hardened self-locking worm and segment gear. There is an infinitely variable ratio between the scraper and agitator, with the agitator rotating from 0-8 times the speed of the scraper. Optional accessories include covers, power tilt, leg extensions, pan carrier, flow diverter, food strainer, swing funnels, alternate mounting systems, different voltages, product time/temperature controls and indicators, water meter, type 316 stainless steel interior, and a kettle accessory kit. The kettle accessory kit includes a ladle, draw-off brush, clean-up brush, commercial kettle whip, and kettle paddle.
