The Convection Steamer is a 24" steamer with two compartments. Each compartment has a capacity of three 12 x 20 x 2-1/2" pans. It has manual controls, a 60-minute mechanical timer, and a manual bypass switch for continuous steaming. The steamer has a left-hand hinged door and controls on the right. It has an instant steam mode and is made of stainless steel construction with an FSS stainless steel base frame. It requires a steam input of 35 psi.

The steamer also has several standard features including a modular cabinet base with a hinged door, a separate main power switch, and serviceable controls from the front. It has solid state controls for water level and safety functions and operates on 115 volts, 60 Hz, single phase. It has a cooking capacity for up to six 12 x 20 x 2-1/2" deep cafeteria pans.

The steamer has an automatic water level control system with a low water power cut-off circuit. It has left-hand door hinging with compartment doors hinged left and controls on the right. It has NSF certified 6" stainless steel legs with adjustable flanged feet for level adjustment. The steamer is made of durable 14 gauge stainless steel construction for the compartment door and steam cooking cavity.

The steamer allows for pressureless cooking with forced convection steam, allowing doors to be opened while cooking continues. It has an instant steam standby mode that holds the generator at steaming temperature for instant cooking. It also has an automatic generator drain at shutdown with a water jet spray rinse cleaning cycle to keep the drain clear. The steam generator is equipped with a high limit pressure safety switch, a 15 psi safety valve, and a steam generator pressure gauge.

The steamer has a steam coil generator with automatic water fill on start-up. It requires a minimum of 35 psi incoming steam pressure with a 3/4" steam line. Each compartment is equipped with a 60-minute mechanical timer, a separate bypass switch for constant steaming, and a cold water condenser for superior cooking results.

The steamer has an exclusive "cool to the touch" compartment door design with a free-floating inner door and a reversible door gasket for an airtight seal. It has a stainless steel slam/latch mechanism for greater reliability. It also has a secondary low water cut-off, factory installed.
