The C5™ 3 Series Moisture Heated Holding & Proofing Cabinet is a mobile, full-height insulated cabinet with a removable bottom mount control module. It has a thermostat that can reach up to 200°F and has moisture control. The cabinet can hold either 18" x 26" pans or 12" x 20" x 2-1/2" pans, with a capacity of 18 or 34 pans respectively. It is made of aluminum and has 5" casters, two of which have brakes. The cabinet operates on 120v/60/1-ph and has a power of 2000 watts and 16.7 amps. It is cULus and NSF certified.
The standard features of the cabinet include three slide styles for maximum holding capacity, the option to choose between high or low wattage models, reliability and durability, and fast heat-up and recovery through a thermostatically controlled, forced convection system. The cabinet is available in red, blue, or gray insulation armor, and the insulation technology retains heat, saves energy, and provides a cool-to-touch exterior. The doors can be solid insulated aluminum or clear polycarbonate, and full-height cabinets can have full-length or dutch-style doors. The control module options include holding, moisture, and combination proof and hold, and all modules have an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. The modules are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
The cabinet also offers various options and accessories such as a travel latch, 6" casters, small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, flush door latch, stainless steel universal slides, straight plugs in different amperages, and chrome universal slide pairs.
The specifications of the cabinet include high-density polyethylene insulation armor, a smooth polymer drip trough with a catch pan, high-temperature Santoprene gaskets, molded hand holds on all four corners, polymer high-strength magnetic pull latch with lever-action release, field reversible double hinged doors with long-life nylon bearings, clear doors with an aluminum frame and polycarbonate window, and solid doors fully insulated with fiberglass and aluminum panels.
