The C5™ 3 Series Moisture Heated Holding & Proofing Cabinet is a mobile, full-height cabinet with Blue Insulation Armour™. It features Dutch insulated aluminum doors and a removable bottom mount control module. The thermostat can be set to a maximum temperature of 200°F and also has moisture control. The cabinet has fixed wire slides on 3" centers, with a capacity of either (18) 18" x 26" pans or (34) 12" x 20" x 2-1/2" pans. It is equipped with 5" casters, two of which have brakes. The cabinet is made of aluminum and operates on 120v/60/1-ph with 2000 watts and 16.7 amps. It is cULus and NSF certified.
The standard features of the C5™ 3 Series Moisture Heated Holding & Proofing Cabinet include three slide styles for maximum holding capacity, the option to choose between high or low wattage models, reliability and durability, and fast heat-up and recovery through a thermostatically controlled, forced convection system. The cabinet is available in Red, Blue, or Gray standard colors, with other colors available upon request. It also features the patented Insulation Armour™ technology, which retains heat, saves energy, and provides a cool-to-touch exterior. The doors can be either solid insulated aluminum or clear polycarbonate, with full-length or dutch-style options for full-height cabinets. The control module options include Holding, Moisture, and Combination Proof and Hold, all of which have an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. The modules are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
The C5™ 3 Series Moisture Heated Holding & Proofing Cabinet also offers various options and accessories, such as a travel latch, 6" casters, small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, flush door latch, stainless steel universal slides, and different plug options.
