The C5™ 3 Series Moisture Heated Holding & Proofing Cabinet is a mobile, 3/4 height cabinet with a removable bottom mount control module. It has a thermostat that can reach up to 200°F and has moisture control. The cabinet has a capacity for (27) 18" x 26" pans, with lip load slides on 1-1/2" centers. It is made of aluminum and has 5" casters, two of which have brakes. The cabinet operates on 120v/60/1-ph and has a power of 2000 watts and 16.7 amps. It is cULus and NSF certified.
The standard features of the cabinet include three slide styles for maximum holding capacity, the option to choose between high wattage or low wattage models, reliability and durability, fast heat-up and recovery, and insulation Armour™ technology that retains heat and provides a cool-to-touch exterior. The cabinet is available in Red, Blue, or Gray, and the doors can be solid insulated aluminum or clear polycarbonate.
The control module options include Holding, Moisture, and Combination Proof and Hold. All modules have an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. They are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
The cabinet also offers various options and accessories such as a travel latch, 6" casters, small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, flush door latch, stainless steel universal slides, and different types of plugs and slide pairs.
The specifications of the cabinet include High Density Polyethylene (HDPE) insulation Armour™, a smooth polymer drip trough with catch pan, high temperature Santoprene gaskets, molded hand holds on all four corners, polymer high-strength magnetic pull latch with lever-action release, field reversible double hinged doors, clear or solid doors, four casters with neoprene wheels, and removable holding modules with various features.
