The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, full-height insulated cabinet with a removable bottom mount control module. It has a thermostat that can reach up to 200°F and fixed wire slides on 3" centers, allowing for a capacity of either (18) 18" x 26" or (34) 12" x 20" x 2-1/2" pans. The cabinet is made of aluminum and has 5" casters, two of which have brakes. It operates on 120v/60/1-ph, with 2000 watts and 16.7 amps. It is cULus and NSF certified.
The standard features of this cabinet include three slide styles for maximum holding capacity, the option to choose between high or low wattage models, reliability and durability, fast heat-up and recovery, and insulation Armour™ technology that retains heat, saves energy, and provides a cool-to-touch exterior. The cabinet is available in red, blue, or gray, and the doors can be solid insulated aluminum or clear polycarbonate.
The control module options include holding, moisture, and combination proof and hold. All modules have an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. They are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
There are also various options and accessories available for this cabinet, such as a travel latch, 6" casters, small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, flush door latch, stainless steel universal slides, and different types of plugs and slide pairs.
