The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, full-height cabinet with a clear polycarbonate door. It has a removable bottom mount control module and a thermostat that can reach temperatures up to 200°F. The cabinet can hold either (18) 18" x 26" pans or (34) 12" x 20" x 2-1/2" pans on fixed wire slides. It is made of aluminum and has 5" casters, with 2 of them having brakes. The cabinet operates on 120v/60/1-ph and has a wattage of 1440 watts and 12 amps. It is cULus and NSF certified.
The cabinet comes with three slide styles for maximum holding capacity: Universal Wire, Lip Load, or Fixed Wire. It also offers the option of high wattage or low wattage models depending on specific needs. The C5™ 3 Series is designed for reliability and durability, with high-quality components for long-lasting use. It provides fast heat-up and recovery through a thermostatically controlled, forced convection system.
The cabinet is available in different colors, with the Insulation Armour™ technology providing heat retention, energy savings, and a cool-to-touch exterior. The doors can be solid insulated aluminum or clear polycarbonate, with full-length or dutch-style options for full-height cabinets. Clear doors allow visibility of the contents without losing heat.
The control module options include Holding, Moisture, and Combination Proof and Hold. They feature an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. The modules are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
Optional accessories include a travel latch, 6" casters, small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, flush door latch, stainless steel universal slides, and different plug options.
The cabinet is made of high-density polyethylene (HDPE) Insulation Armour™ and features a smooth polymer drip trough with a catch pan. It has high-temperature Santoprene gaskets, molded hand holds on all four corners, polymer high-strength magnetic pull latch with lever-action release, and field reversible double hinged doors with long-life nylon bearings.
