The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, full-height cabinet with Blue Insulation Armour™ and Dutch insulated aluminum doors. It has a lower wattage option and a removable bottom mount control module. The thermostat can be set to a maximum temperature of 200°F. The cabinet has universal wire slides on 3" centers, adjustable on 1-1/2" increments, and can hold either (18) 18" x 26" or (34) 12" x 20" x 2-1/2" pans. It is equipped with 5" casters, two of which have brakes. The cabinet is made of aluminum and operates on 120v/60/1-ph with 1440 watts and 12 amps. It is cULus and NSF certified.
The cabinet has three slide styles to maximize holding capacity: Universal Wire, Lip Load, or Fixed Wire. It is available in high wattage or low wattage models depending on the specific needs of the application. The C5™ 3 Series is designed for reliability and durability, with high-quality components for long-lasting use. It provides fast heat-up and recovery through a thermostatically controlled, forced convection system.
The Insulation Armour™ technology retains heat, saves energy, and keeps the exterior cool to touch. It is made of durable polymer construction that is dent, impact, and stain resistant. The cabinet doors can be solid insulated aluminum or clear polycarbonate. Full Height cabinets can have full-length or Dutch-style doors. Clear doors provide visibility of the contents without losing heat.
The control module options include Holding, Moisture, and Combination Proof and Hold. They feature an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. The modules are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
