The C5™ 3 Series Moisture Heated Holding & Proofing Cabinet is a mobile, 3/4 height cabinet with a removable bottom mount control module. It has a thermostat that can reach up to 200°F and has moisture control. The cabinet is insulated with Blue Insulation Armour™, which helps retain heat and provides a cool-to-touch exterior. It has fixed wire slides on 3" centers, with a capacity of either (14) 18" x 26" pans or (26) 12" x 20" x 2-1/2" pans. The cabinet is made of aluminum and has 5" casters, two of which have brakes. It operates on 120v/60/1-ph, with 2000 watts and 16.7 amps. It is cULus and NSF certified.
The standard features of the C5™ 3 Series Moisture Heated Holding & Proofing Cabinet include three slide styles for maximum holding capacity, the option to choose between high wattage or low wattage models, reliability and durability, fast heat-up and recovery, and a choice of colors for the Insulation Armour™. The cabinet also has the option of solid insulated aluminum or clear polycarbonate doors, with full length or dutch-style doors for full height cabinets. The control module is removable without tools and features an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights.
There are also various options and accessories available for the cabinet, such as a travel latch, 6" casters, a small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, a flush door latch, stainless steel universal slides, and different types of plugs and slide pairs.
