The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, full-height insulated cabinet with lower wattage and Grey Insulation Armour™. It features Dutch insulated aluminum doors, a removable bottom mount control module, and a thermostat that can reach temperatures up to 200°F. The cabinet has fixed wire slides on 3" centers, with a capacity to hold either 18" x 26" pans or 12" x 20" x 2-1/2" pans. It is equipped with 5" casters, two of which have brakes. The cabinet is made of aluminum and operates on 120v/60/1-ph, with 1440 watts and 12 amps. It is cULus and NSF certified.
The standard features of the C5™ 3 Series Heated Holding & Proofing Cabinet include three slide styles for maximum holding capacity, the option to choose between high or low wattage models, reliability and durability, and fast heat-up and recovery through a thermostatically controlled, forced convection system. The cabinet is available in Red, Blue, or Gray Insulation Armour™, with other colors available upon request. The Insulation Armour™ technology retains heat, saves energy, and provides a cool-to-touch exterior. The cabinet doors can be solid insulated aluminum or clear polycarbonate, with full-length or dutch-style options for full-height cabinets. The control module options include Holding, Moisture, and Combination Proof and Hold, all featuring an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. The control modules are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
The C5™ 3 Series Heated Holding & Proofing Cabinet also offers various options and accessories, such as a travel latch, 6" casters, a small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, a flush door latch, stainless steel universal slides, and different plug options.
