The C5™ 3 Series Moisture Heated Holding & Proofing Cabinet is a mobile, 3/4 height cabinet with a removable bottom mount control module. It has a thermostat that can reach up to 200°F and has moisture control. The cabinet has a capacity for (27) 18" x 26" pans, with lip load slides on 1-1/2" centers. It is made of aluminum and has 5" casters, two of which have brakes. The cabinet operates on 120v/60/1-ph, with 2000 watts and 16.7 amps. It is cULus and NSF certified.
The standard features of the C5™ 3 Series Moisture Heated Holding & Proofing Cabinet include three slide styles for maximum holding capacity, the option to choose between high wattage or low wattage models, reliability and durability, fast heat-up and recovery, and insulation Armour™ technology that retains heat and provides a cool-to-touch exterior. The cabinet is available in Red, Blue, or Gray, with other colors available upon request. The doors can be solid insulated aluminum or clear polycarbonate, with full length or dutch-style options for full height cabinets. The control modules are removable without tools and feature an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights.
