The C5™ 3 Series Moisture Heated Holding & Proofing Cabinet is a mobile, insulated cabinet with a clear polycarbonate door. It has a removable bottom mount control module and a thermostat that can reach temperatures up to 200°F. The cabinet has fixed wire slides on 3" centers, with a capacity to hold either 14 18" x 26" pans or 26 12" x 20" x 2-1/2" pans. It is equipped with 5" casters, two of which have brakes. The cabinet is made of aluminum and operates on 120v/60/1-ph with 2000 watts and 16.7 amps. It is cULus and NSF certified.
The cabinet offers three slide styles for maximum holding capacity: Universal Wire, Lip Load, or Fixed Wire. It also comes in high wattage or low wattage models to suit different needs. The C5™ 3 Series is designed for reliability and durability, with high-quality components for long-lasting use. It provides fast heat-up and recovery through a thermostatically controlled, forced convection system.
The cabinet is available in Red, Blue, or Gray insulation Armour™, which is a patented insulation technology that retains heat, saves energy, and provides a cool-to-touch exterior. The insulation Armour™ is made of durable polymer construction that is dent, impact, and stain resistant. It also has molded-in hand holds for easy mobility.
The cabinet can be equipped with either solid insulated aluminum doors or clear polycarbonate doors. Full Height cabinets can be configured with full length or dutch-style doors. Clear doors provide visibility of the contents without losing heat.
The control module options include Holding, Moisture, and Combination Proof and Hold. All modules feature an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. They are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
The cabinet offers various options and accessories, such as a travel latch, 6" casters, small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, flush door latch, stainless steel universal slides, and different plug options.
