The C5™ 3 Series Moisture Heated Holding & Proofing Cabinet is a mobile, 3/4 height cabinet with a grey Insulation Armour™. It has an insulated cabinet and door, with a removable bottom mount control module. The thermostat can be set to temperatures up to 200°F and has moisture control. The cabinet has universal wire slides on 3" centers, adjustable on 1-1/2" increments, and can hold either (14) 18" x 26" pans or (26) 12" x 20" x 2-1/2" pans. It has 5" casters, with 2 of them having brakes. The cabinet is made of aluminum and operates on 120v/60/1-ph, with 2000 watts and 16.7 amps. It is cULus and NSF certified.
The standard features of the cabinet include three slide styles for maximum holding capacity, the option to choose between high wattage or low wattage models, reliability and durability, fast heat-up and recovery, and the availability of different colors for the Insulation Armour™.
The cabinet also has various options and accessories available, such as a travel latch, 6" casters, small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, flush door latch, stainless steel universal slides, and different types of plugs and slide pairs.
The specifications of the cabinet include a High Density Polyethylene (HDPE) Insulation Armour™, a smooth polymer drip trough with catch pan, high temperature Santoprene gaskets, molded hand holds on all four corners, a polymer high-strength magnetic pull latch with lever-action release, field reversible double hinged doors, clear or solid doors, four casters with neoprene wheels, and removable holding modules with various features.
