The C5™ 3 Series Moisture Heated Holding & Proofing Cabinet is a mobile, full-height cabinet with Blue Insulation Armour™. It features Dutch insulated aluminum doors, a removable bottom mount control module, and a thermostat that can reach temperatures up to 200°F. The cabinet has a capacity to hold up to 35 pans measuring 18" x 26" and is equipped with lip load slides on 1-1/2" centers. It is made of aluminum and has 5" casters, two of which have brakes. The cabinet operates on 120v/60/1-ph, with 2000 watts and 16.7 amps. It is cULus and NSF certified.
The standard features of the C5™ 3 Series Moisture Heated Holding & Proofing Cabinet include three slide styles for maximum holding capacity, the option to choose between high or low wattage models, reliability and durability, and fast heat-up and recovery through a thermostatically controlled, forced convection system. The cabinet is available in Red, Blue, or Gray insulation Armour™, with other colors available upon request. The insulation Armour™ technology retains heat, saves energy, and provides a cool-to-touch exterior. The cabinet doors can be solid insulated aluminum or clear polycarbonate, with full height cabinets available in full length or Dutch-style doors. The control modules available are Holding, Moisture, and Combination Proof and Hold, all featuring an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. The modules are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
The C5™ 3 Series Moisture Heated Holding & Proofing Cabinet also offers various options and accessories, including a travel latch, 6" casters, a small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, a flush door latch, stainless steel universal slides, straight plugs in 20 Amp or 15 Amp, and chrome universal slide pairs.
