The C5™ 9 Series Controlled Humidity Heated Holding & Proofing Cabinet is a mobile, full-height cabinet made of stainless steel. It features clear double panel tempered glass Dutch doors with lip load slides. The cabinet has a capacity to hold 34 pans measuring 18" x 26" with a spacing of 1-1/2" OC. It is equipped with 5" casters, a polymer bumper, and a drip trough combination. The cabinet operates on 120v/60/1-PH with 2000 watts and 16 amps. It has a NEMA 5-20P plug and is cULus and NSF certified.

The C5 9 Series controller prioritizes heat generation over humidity generation to ensure the cabinet holds food at the desired temperature for food safety. It has a rapid heat-up and recovery time, precise humidity control, and intelligent power distribution for maximum efficiency. The cabinet also has a low water sensor and low temperature alarm for safety.
The 9 Series controller is intuitive and easy to use, with temperature and humidity displays, low-temp alarm, recall and memory functions, and a low-water alarm.
The cabinet is available in different configurations, sizes, and door types. It is made of stainless steel or aluminum and can be a full height, 3/4 height, 1/2 height, or under counter cabinet. It can have solid or clear doors, with options for reach-in or pass-thru configurations.
Optional accessories include 6" casters, small item shelf, rear push handle, control panel cover, different door latches, drain hose adapter, stainless steel legs, and different types of plugs. There are also options for universal slide upgrades for different cabinet sizes.
The cabinet doors are fully insulated with solid or clear double-pane tempered glass. It has built-in polymer handles, high-density fiberglass insulation, cabinet-mounted Santoprene gaskets, self-closing and lift-off hinges, a non-marking polymer bumper and drip trough combination, and chrome plated magnetic pull latches. The cabinet material is either stainless steel or aluminum.
