The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, full-height cabinet with Blue Insulation Armour™. It features Dutch clear polycarbonate doors and a removable bottom mount control module. The thermostat can be set to a maximum temperature of 200°F. The cabinet has universal wire slides on 3" centers, adjustable on 1-1/2" increments, and can hold either (18) 18" x 26" pans or (34) 12" x 20" x 2-1/2" pans. It is equipped with 5" casters, two of which have brakes. The cabinet is made of aluminum and operates on 120v/60/1-ph with 2000 watts and 16.7 amps. It is cULus and NSF certified.
The cabinet offers three slide styles for maximum holding capacity: Universal Wire, Lip Load, or Fixed Wire. It is available in standard high wattage or low wattage models depending on the specific needs of the application. The C5™ 3 Series is designed for reliability and durability, with high-quality components that ensure a long life of worry-free use. It provides fast heat-up and recovery through a thermostatically controlled, forced convection system.
The Insulation Armour™ technology used in the cabinet retains heat, saves energy, and provides a cool-to-touch exterior. It is made of durable polymer construction that is dent, impact, and stain resistant. The cabinet features solid insulated aluminum or clear polycarbonate doors. Clear doors allow visibility of the contents without the heat loss associated with opening the door.
The control module options include Holding, Moisture, and Combination Proof and Hold. All modules feature an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. They are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
The C5™ 3 Series offers various options and accessories, including a travel latch, 6" casters, small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, flush door latch, stainless steel universal slides, and different plug options.
The cabinet is made of High Density Polyethylene (HDPE) for insulation armour. It has a smooth polymer drip trough with a catch pan, high-temperature door-mounted Santoprene gaskets, molded hand holds on all four corners,
