The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, half-height insulated cabinet with a removable bottom mount control module. It has a thermostat that can reach up to 200°F and fixed wire slides on 3" centers, allowing for a capacity of either (8) 18" x 26" pans or (16) 12" x 20" x 2-1/2" pans. The cabinet is made of aluminum and has 5" casters, two of which have brakes. It operates on 120v/60/1-ph, with 2000 watts and 16.7 amps. It is cULus and NSF certified.

The cabinet is available in Red, Blue, or Gray insulation armor, which is a patented insulation technology that retains heat, saves energy, and provides a cool-to-touch exterior. The doors can be solid insulated aluminum or clear polycarbonate, with full-length or dutch-style options for full-height cabinets. The control module options include Holding, Moisture, and Combination Proof and Hold, all of which feature an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. The control modules are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
