The C5™ 9 Series Controlled Humidity Heated Holding & Proofing Cabinet is a mobile, half-height cabinet made of stainless steel. It features a clear double panel tempered glass door, lip load slides, and has a capacity to hold (17) 18" x 26" pans with 1-1/2" OC spacing. The cabinet is equipped with 5" casters, a polymer bumper, and a drip trough combination. It operates on 120v/60/1-ph power with 2000 watts and 16.7 amps. It is cULus, NSF, and ENERGY STAR® certified.
The cabinet is designed for reliability and durability, with high-quality components and robust construction. It has top-mounted controls for easier access, better readability, and to prevent damage. The temperature priority feature ensures that the cabinet holds food at the desired temperature for food safety. The intuitive 9 Series solid state controller provides continuous monitoring and control of both temperature and humidity, resulting in better food quality. The cabinet has rapid heat-up and recovery times, precise humidity control, and intelligent power distribution for maximum efficiency.
The 9 Series controller is easy to use and displays the actual cabinet temperature and relative humidity. It has a low-temp alarm to ensure the cabinet is operating at the desired temperature. It also has a low-water alarm to indicate when water is needed for the humidity generation system.
The cabinet is available in different configurations, sizes, and door options. It is made of stainless steel or aluminum and can be a full height, 3/4 height, 1/2 height, or under counter cabinet. It can have solid or clear doors, and the doors are lift-off and field reversible.
There are also various options and accessories available for the cabinet, such as casters, shelves, handles, control panel cover, different door latches, drain hose adapter, stainless steel legs, and different types of plugs. There are also stainless steel universal slide upgrades available for different cabinet sizes.
The cabinet doors are fully insulated and made of solid or tempered glass. The cabinet has built-in polymer handles, high-density fiberglass insulation, cabinet mounted Santoprene gaskets, self-closing and lift-off hinges, a non-marking polymer bumper and drip trough combination, and chrome plated magnetic pull latches. The display and controls show the actual cabinet temperature and relative humidity, and the cabinet is made of type 304 stainless steel or aluminum.
