The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, half-height cabinet with a clear polycarbonate door. It has a removable bottom mount control module and a thermostat that can reach up to 200°F. The cabinet can hold either (8) 18" x 26" or (16) 12" x 20" x 2-1/2" pans on fixed wire slides. It is made of aluminum and has 5" casters, two of which have brakes. The cabinet operates on 120v/60/1-ph and has a wattage of 1440 watts and 12 amps. It is cULus and NSF certified.
The cabinet comes with several standard features, including three slide styles for maximum holding capacity, the option to choose between high or low wattage models, reliability and durability, and fast heat-up and recovery through a thermostatically controlled, forced convection system. The cabinet is available in Red, Blue, or Gray insulation armor, which retains heat, saves energy, and provides a cool-to-touch exterior. The doors can be either solid insulated aluminum or clear polycarbonate, with the clear doors allowing visibility of the contents without heat loss.
The cabinet also offers several options and accessories, such as a travel latch, 6" casters, a small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, a flush door latch, stainless steel universal slides, and different plug options.
The specifications of the cabinet include high-density polyethylene insulation armor, a smooth polymer drip trough with catch pan, high-temperature Santoprene gaskets, molded hand holds on all four corners, a polymer high-strength magnetic pull latch with lever-action release, field reversible double hinged doors with long-life nylon bearings, clear doors with an aluminum frame and polycarbonate window, and solid doors with fiberglass insulation and aluminum panels. The cabinet also has four casters with neoprene wheels, a ball bearing blower forced air system, and holding modules with a digital thermometer, recessed control dials, a master on/off switch, a "Power On" light, a water pan, and a ball bearing blower forced air system.
