The C5™ 3 Series Moisture Heated Holding & Proofing Cabinet is a mobile, half-height insulated cabinet with a removable bottom mount control module. It has a thermostat that can reach up to 200°F and has moisture control. The cabinet can hold either (8) 18" x 26" pans or (16) 12" x 20" x 2-1/2" pans on fixed wire slides. It is made of aluminum and has 5" casters, two of which have brakes. The cabinet operates on 120v/60/1-ph and has a power output of 2000 watts and 16.7 amps. It is cULus and NSF certified.
The standard features of the C5™ 3 Series Moisture Heated Holding & Proofing Cabinet include three slide styles for maximum holding capacity, the option to choose between high or low wattage models, reliability and durability, fast heat-up and recovery, and insulation Armour™ technology that retains heat and provides a cool-to-touch exterior. The cabinet is available in red, blue, or gray insulation Armour™, and other colors are available upon request. The doors can be solid insulated aluminum or clear polycarbonate, and full-height cabinets can be configured with full-length or dutch-style doors. The control module options include holding, moisture, and combination proof and hold, all of which feature an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. The control modules are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
The C5™ 3 Series Moisture Heated Holding & Proofing Cabinet also offers various options and accessories, such as a travel latch, 6" casters, a small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, a flush door latch, stainless steel universal slides, straight plugs in 20 Amp or 15 Amp, and chrome universal slide pairs.
