The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, half-height insulated cabinet with a removable bottom mount control module. It has a thermostat that can reach up to 200°F and can hold up to 17 18" x 26" pans on lip load slides. The cabinet is made of aluminum and has 5" casters, with 2 of them having brakes. It operates on 120v/60/1-ph, with 2000 watts and 16.7 amps. It is cULus and NSF certified.
Some standard features of the cabinet include three slide styles for maximum holding capacity, the option to choose between high or low wattage models, reliability and durability, fast heat-up and recovery, and insulation Armour™ technology that retains heat and provides a cool-to-touch exterior. The cabinet also has options for different colored insulation Armour™, solid or clear doors, and three different control modules.
There are also various options and accessories available for the cabinet, such as a travel latch, 6" casters, small item shelf, stainless steel legs, rear rigid casters, left-hand hinging, flush door latch, stainless steel universal slides, and different types of plugs and slide pairs.
The specifications of the cabinet include high-density polyethylene insulation Armour™, a smooth polymer drip trough with catch pan, high-temperature Santoprene gaskets, molded hand holds on all four corners, a polymer magnetic pull latch with lever-action release, field reversible double hinged doors, clear or solid doors, four casters with neoprene wheels, and removable holding modules with various features.
