The C5™ 1 Series Heated Holding & Proofing Cabinet is a mobile, full-height cabinet made of aluminum. It has a clear polycarbonate door and a removable bottom mount control module. The thermostat can be set to a maximum temperature of 190°F. The cabinet can hold up to 35 pans measuring 18" x 26" on lip load slides spaced 1-1/2" apart. It is equipped with 5" casters, two of which have brakes. The cabinet operates on 120v/60/1-ph power and has a power rating of 2000 watts and 16.7 amps. It is certified by cULus and NSF.

There are three holding modules available, all of which have an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. For proofing applications, there is a separate module with individual analog controls for temperature and humidity levels. The combination module allows for switching between heated holding mode and proofing mode with individual analog controls for temperature and humidity levels.
Optional accessories for the C5™ 1 Series Heated Holding & Proofing Cabinet include a travel latch, 6" casters, a small item shelf, a rear push handle, stainless steel legs, factory left-hand hinging, rear rigid casters, a perimeter bumper, a flush door latch, stainless steel universal slides, and different types of straight plugs and universal slides.
The cabinet is equipped with a smooth polymer drip trough with a catch pan, high-temperature Santoprene gaskets, a polymer magnetic pull latch with a lever-action release, and field-reversible double hinged doors with long-life nylon bearings. The clear doors have an extruded aluminum powder-coated frame and a .090" polycarbonate window.
