The C5™ 9 Series Controlled Humidity Heated Holding & Proofing Cabinet is a mobile, full-height cabinet with insulated solid Dutch doors. It has lip load slides and a capacity to hold 34 pans measuring 18" x 26" with a spacing of 1-1/2" OC. The cabinet is made of stainless steel and has 5" casters with a polymer bumper and drip trough combination. It operates on 120v/60/1-PH with 2000 watts and 16 amps. It is cULus, NSF, and ENERGY STAR® certified.
The cabinet features top-mounted controls for easier access, better readability, and to prevent damage. It is designed for reliability and durability, with high-quality components and robust construction. The temperature priority feature ensures that the cabinet holds food at the desired temperature for food safety. The intuitive 9 Series solid state controller provides continuous monitoring and control of both temperature and humidity, resulting in better food quality. The cabinet is available in different configurations, sizes, and door types. It is made of stainless steel or aluminum and can be a full height, 3/4 height, 1/2 height, or under counter cabinet. It can have solid or clear doors, which are lift-off and field reversible. The 9 Series controller is easy to use and displays actual cabinet temperature and relative humidity. It also has a low-temp alarm and recall & memory functions.
There are various options and accessories available for the cabinet, including casters, shelves, handles, control panel cover, door latch options, drain hose adapter, stainless steel legs, and slide upgrades. The cabinet doors are fully insulated and can be solid or clear. The handles are polymer and the insulation is 2.5" thick high-density fiberglass. The cabinet has high-temperature Santoprene gaskets, self-closing and lift-off hinges, a non-marking polymer bumper and drip trough, and chrome plated magnetic pull latches.
