The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, 3/4 height cabinet with a lower wattage and Blue Insulation Armour™. It has an insulated cabinet and door, with a removable bottom mount control module. The thermostat can be set to a maximum temperature of 200°F. The cabinet has universal wire slides on 3" centers, adjustable on 1-1/2" increments, and can hold either (14) 18" x 26" pans or (26) 12" x 20" x 2-1/2" pans. It is equipped with 5" casters, two of which have brakes. The cabinet is made of aluminum and operates on 120v/60/1-ph, with a power consumption of 1440 watts and 12 amps. It is cULus and NSF certified.
The standard features of the C5™ 3 Series Heated Holding & Proofing Cabinet include three slide styles for maximum holding capacity, the option to choose between high wattage or low wattage models, reliability and durability, fast heat-up and recovery, and a choice of colors for the Insulation Armour™. The Insulation Armour™ is a patented insulation technology that retains heat, saves energy, and has a cool-to-touch exterior. The cabinet is available with either solid insulated aluminum doors or clear polycarbonate doors. The control module options include Holding, Moisture, and Combination Proof and Hold, all of which have an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. The control modules are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
The C5™ 3 Series Heated Holding & Proofing Cabinet also offers various options and accessories, such as a travel latch, 6" casters, a small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, a flush door latch, stainless steel universal slides, and different types of plugs and slide pairs.
