The C5™ 1 Series Proofing Cabinet is a mobile, non-insulated cabinet with a clear polycarbonate door. It has a removable bottom mount control module and a thermostat that can be set to a maximum temperature of 120°F. The cabinet has universal wire slides on 3" centers, which are adjustable on 1-1/2" increments. It can hold up to 14 18" x 26" pans or 26 12" x 20" x 2-1/2" pans. The cabinet is equipped with 5" casters, two of which have brakes. It is made of aluminum and operates on 120v/60/1-ph with 1440 watts and 12 amps. The cabinet is cULus and NSF certified.

There are three holding modules available for the cabinet. All modules feature an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. The proofing module is designed for proofing applications only and has individual analog controls for temperature and humidity levels. The holding module is for heated holding applications and has an analog temperature control and a passive humidity generation system. The combination module can switch between heated holding mode and proofing mode with individual analog controls for temperature and humidity levels.
The cabinet also offers various options and accessories, including a travel latch, 6" casters, a small item shelf, a rear push handle, stainless steel legs, factory left-hand hinging, rear rigid casters, a perimeter bumper, a flush door latch, stainless steel universal slides, and different types of straight plugs and universal slide pairs.
The cabinet is equipped with a smooth polymer drip trough with a catch pan, high temperature door-mounted Santoprene gaskets, polymer magnetic pull latches with lever-action release, field reversible double hinged 180° swing hinges with long-life nylon bearings, and extruded aluminum powder coated frame with a .090" polycarbonate window.
