The C5™ 1 Series Heated Holding & Proofing Cabinet is a mobile, 3/4 height cabinet that is non-insulated. It features a clear polycarbonate door and a removable bottom mount control module. The thermostat can be set to a maximum temperature of 190°F. The cabinet has fixed wire slides on 3" centers, with a capacity to hold either 14 18" x 26" pans or 26 12" x 20" x 2-1/2" pans. It is equipped with 5" casters, two of which have brakes. The cabinet is made of aluminum and operates on 120v/60/1-ph with 2000 watts and 16.7 amps. It is certified by cULus and NSF.

There are three holding modules available, all of which feature an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. For proofing applications, there is a separate module with individual analog controls for temperature and humidity levels. The heated holding module has an analog temperature control and a passive humidity generation system. The combination module allows for easy switching between heated holding mode and proofing mode, with individual analog controls for temperature and humidity levels.
There are several options and accessories available for the C5™ 1 Series Heated Holding & Proofing Cabinet, including a travel latch, 6" casters, small item shelf, rear push handle, stainless steel legs, factory left-hand hinging, rear rigid casters, perimeter bumper, flush door latch, stainless steel universal slides, and different types of straight plugs and universal slides.
