The Short Series™ Steam Jacketed Kettle is an electric, tilting kettle with a 40-gallon capacity. It features a full steam jacket design and a 35" rim height. The kettle has an open tri-leg base and a stainless steel exterior finish. It comes standard with flanged feet and has a 50 psi rating.
Some of the standard features of the kettle include a 50 psi safety valve, water resistant controls with splash-proof construction, and a splash-proof element cover with a double gasket seal. The kettle is approved by UL, CSA, CE, NSF, and ASME. It has a large pouring lip for high capacity and chunky products, and a 50 psi steam jacket rating for higher cooking temperatures.
The kettle operates on a standard voltage of 208-240 volts, 60 Hz, 3-phase, 3-wire. It is self-contained and easily installed, requiring only an electrical hook-up. The kettle has a solid state water level control and a 1 5/8" O.D. tri-leg support with level adjustable feet for floor bolting. The steam jacket is filled with treated water, eliminating the need for venting or refilling.
The kettle has welded-in heating elements for better vacuum holding and prevention of leaks or water loss. It has a reinforced rolled rim design to prevent damage and eliminate "bar rim designs". The tilt mechanism of the kettle is made of roller bearings and case hardened self-locking worm and segment gear.
The kettle is easily cleaned, with both the kettle and exterior surfaces made of type 304 stainless steel with a #4 finish. It has a rear mounted easy access pressure gauge and pressure relief valve to prevent tampering. The control panel includes a power ON/OFF switch, LED indicators for low water and heat cycle, and an adjustable temperature control dial.
There are various options and accessories available for the kettle, including a pan carrier, lift off cover, flow diverter, food strainer, drain strainer, kettle markings, basket strainer, measuring strip, correctional packages, steam control kit, kettle accessory kit, spring assist cover, 240 volt single phase option, heat deflector shield, 316 stainless steel liner, tri-basket strainer support systems, and a 2" tangent draw-off (available in 40 gallon only). There are also options for hot and cold water faucets, which require a faucet bracket.
