The Steamcraft® Gemini™ 6 Convection Steamer is a pressureless gas steamer with 2 compartments, each with individual generators. It can accommodate 3 pans measuring 12 x 20 x 2-1/2 inches per compartment, with an additional compartment for pan storage. The steamer features manual controls, a 60-minute mechanical timer, and a manual bypass switch for continuous steaming. The door is hinged on the left side, with controls located on the right. The steamer is constructed with stainless steel and has 6-inch adjustable legs with flanged feet. It has a total BTU of 100,000.
Standard features of the steamer include CSA (AGA, CSA) and U.L/NSF#4 approvals, left-hinged doors, right-side controls, 6-inch stainless steel adjustable legs with flanged feet, a compartment steam shut-off switch when the door is opened, and exclusive brass steam jets for even steam distribution. Each compartment can hold 3 steam table pans, and the steamer has easy front-access generator controls for servicing. The steam generators have a power output of 50,000 BTU each and there is a deliming port for easy cleaning. The steamer is made of durable 14-gauge, 304 stainless steel.
Additional features include a generator steam standby mode, a cleaning port for descaling, and a 60-minute electro-mechanical timer with a manual bypass switch. The steamer also has a Gemini Drain/Power Control System with a manual 1/2 inch "Ball Valve" type drain and a remote probe-type water level control. Optional accessories include water filters, propane gas, on/off steam switch controls, an electronic timer with compensating feature, and a descale solution.
