 Equipped with five (5) movable stainless steel wire shelves, each with 13 adjustable positions, this unit can accommodate food of various sizes. It is mounted on a floor stand with rack support, providing stability and storage space for essentials. With a temperature range of up to 500 degrees Fahrenheit and a multi-speed reversible fan, the hot air and steam are evenly distributed throughout the fully insulated chamber, ensuring even cooking on every rack. The unit is open vented to prevent flavor transfer, and the door has a safety system in place that releases steam before fully opening. Additionally, steam can be released at the push of a switch.
 
 The Blodgett gas combi oven utilizes steam, hot air, and a combination of both to cook dishes quickly while sealing in the original qualities such as taste, texture, and nutrients, resulting in healthy and delicious meals. Other cooking modes include cool down, rethermalizing, steam-on-demand, and Vario Steaming, which produces perfectly tender and moist food on the inside and perfectly crisped on the outside. The unit also allows for programming and storing up to 100 recipes, enabling faster preparation of menu offerings. Furthermore, recipes can be uploaded and downloaded via the USB port.
 
 The interior of the oven is illuminated by halogen lights, providing superior visibility through the dual-pane glass window, allowing you to monitor the cooking process without interruption. The unit can also hold food at safe temperatures until ready to serve, and the 4" removable fillet core temperature probe ensures that the food is cooking as intended.
 
 Cleaning this commercial oven is a breeze. It features a coved interior, hinged pressure panel, and inner glass. The unit notifies you when deliming is required, and the semi-auto delime system, retractable hose, deliming bottle and pump assembly, and pressure spray bottle make the process easy. A drip pan on the door keeps the surrounding area safe and dry.
