The Blodgett Steam BCX-14G DBL is a high-performance double-stacked gas combi steamer that offers a cooking power of 230,000 BTU. It is constructed with durable stainless steel and features two cooking chambers, each capable of holding 14 full-size hotel pans or seven full-size sheet pans. The unit is equipped with manual controls for easy operation and can cook in various ways to accommodate diverse menus.
 
 One of the cooking methods available is pressureless steam, which is ideal for preparing healthy dishes while retaining flavors, nutrients, and texture with minimal fat. The oven can also utilize convection heat for roasting meats and vegetables to achieve moist and perfectly browned results. Additionally, it can combine both steam and convection heat for top-quality results and faster cooking times. The unit also offers additional functionalities such as rethermalizing, low-temp steaming, and cool down.
 
 For steaming, the combi oven utilizes a self-contained steam generator that is separate from the cooking compartments. This allows for easy recovery and switching between different modes. Specific functionalities added by Blodgett include steam-on-demand, which allows for the introduction of steam during ongoing cooking, and Vario Steam, designed for optimal roasting results. The open vent system prevents flavor transfer, enabling the cooking of various dishes without compromising taste. The oven also features a cavity vent control and a door latch that initiates steam release for added safety.
 
 Each oven is equipped with five stainless steel wire shelves that can be adjusted to 13 different positions, depending on the size and quantity of food being cooked. A multi-speed reversing fan ensures even distribution of heat and steam throughout the cooking chambers, resulting in consistent quality. The oven also includes a 4" core temperature probe for precise temperature control and accurate results. It can also be used to hold food at serving temperatures for extended periods.
