The electric braising pan has a capacity of 40 gallons and features 16 kW FastBatch™ embedded heating technology. It has a 46" wide open base with a manual tilt function. The stainless steel pan is 9" deep and includes gallon markings, a pouring lip, and a removable strainer. The pan also has a spring assist cover with a drip edge and a pan holder. The controls are water tight and solid state, and the pan comes with a faucet bracket. It has 12" stainless steel legs with adjustable flanged feet and is cULus and UL EPH Classified.
The standard features of the braising pan include water tight controls and enclosures, a lid that stops in place for vented cooking, and a drop away food receiving pan support that mounts under the pouring lip. The cooking surface is made of anti-stick stainless steel clad bonded to a steel sub plate. The pan has a stainless steel front, back, sides, and legs, and the legs have adjustable flanged feet. The temperature controls are solid state and adjustable from 50°F to 425°F. The pan also includes a faucet mounting bracket, a spring assist cover with a cool to the touch handle and a condensate lip, and a pitcher pour tapered front with oversized flanges and a formed pouring lip with a removable strainer. The braising pan also features FastBatch™ rapid heating technology and embedded heating elements for improved heating performance and even temperature distribution. The pan has dual recessed hinges mounted under the cooking pan, and it has an anti-jam pan lifting mechanism that can be operated manually with a removable handle.
The options for the braising pan include a 480 volt, 60-50 Hz, 3 phase electrical service, a second year extended limited parts and labor warranty, and a motor driven pan lift with a removable manual crank handle. There are also options for different types of draw-off valves and a standard security package that includes a perforated lid support cover, lockable cover for the controls, security screws and tackwelds, and securing crank handle, pan strainer, and non-door type panels.
