The electric braising pan has a capacity of 30 gallons and features 12 kW FastBatch™ embedded heating technology. It has a 36" wide open base with a manual tilt function. The stainless steel pan is 9" deep and has gallon markings, a pouring lip, and a removable strainer. The pan holder and spring assist cover with a drip edge are included. The controls are water tight and solid state. The pan also comes with a faucet bracket and 12" stainless steel legs with adjustable flanged feet. It is cULus and UL EPH Classified. 

The standard features of the braising pan include water tight controls and enclosures, a lid that stops in place for vented cooking, a drop away food receiving pan support, and an anti-stick stainless steel clad cooking surface. The pan is made of stainless steel and has a solid state temperature control that is adjustable from 50°F to 425°F. The pan also has a faucet mounting bracket, a spring assist cover with a condensate lip, and a pitcher pour tapered front with a removable perforated strainer. The pan has FastBatch™ rapid heating technology and embedded heating elements for improved heating performance and even temperature distribution. It also has a manually operated anti-jam pan lifting mechanism. 

There are several options available for the braising pan, including a 480 volt, 60-50 Hz, 3 phase electrical service, a second year extended limited parts and labor warranty, and a motor driven pan lift with a removable manual crank handle. There are also options for different types of draw-off valves and a standard security package that includes a perforated lid support cover and security screws and tackwelds. 

Accessories for the braising pan are sold separately and include casters, pantry faucets, a pot filler and backflow preventer, a steaming pan insert rack, a washdown hose with backflow preventer, a catch can with a drain hose, a drain waste pan, and a perforated boiling basket. 

The specifications for the braising pan include a free-standing design with a partially enclosed stainless steel base, a fully welded frame, and 12" legs with adjustable flanged feet. The pan has dual recessed hinges, an anti-stick stainless steel clad cooking surface, and FastBatch™ rapid heating technology.
