The Holding/Transport Cabinet, Institutional Series, is a mobile cabinet with a capacity to hold (30) 18" x 26" x 1" pans. It includes fixed lipload racking, a forced air blower, side mounted push handles, a recessed control panel, and an electronic control with a digital display. The cabinet can maintain temperatures from ambient to 190°F and is made of 20 gauge stainless steel both on the interior and exterior. It is cULus and UL EPH Classified certified. The cabinet comes with several standard features including a rear mounted cord, field reversible doors, a magnetic action door latch, and Dutch doors for models VBP15 and VBP18. It also has recessed side mounted handles, an integrated steel frame for maximum strength, and is fully insulated with 1 1/2" in side walls and 2" in the top. The cabinet is ENERGY STAR qualified (except for model VBP18) and has a blower motor for gentle and even temperature distribution. It is equipped with 5" heavy duty casters (2 swivel with brakes and 2 rigid) for easy mobility (3" casters for VBP5). The cabinet's interior and exterior are constructed out of 20 gauge stainless steel for durability. It has a simple knob actuated electronic control for holding temperatures up to 190°F. The cabinet comes with a cord and plug: NEMA 5-15 for 120 volts and NEMA 6-15 for 208-240 volts. It has a one year limited parts and labor warranty, with a lifetime parts warranty on the heating elements after the first year. The cabinet's holding capacity is suitable for 18" x 26" sheet pans and other pan sizes on shelves. It can also accommodate 12" x 20" pans or a combination of both on 1 1/2" centers. Optional features for the cabinet include 208/240 volt power supply, a humidity pan, additional tray slides, a full perimeter bumper, wire shelves to sit on tray slides, and glass Dutch doors for models VBP7 and VBP15.
