The Combi Oven/Steamer is an electric appliance that is boilerless and has a capacity of (7) 18" x 26" full size sheet or (14) 12" x 20" full size hotel pans. It features (3) knobs with LED displays for temperature, timer, and humidity control. The humidity automatically adjusts with the temperature selection. The oven also has an auto-reversing fan with an electronic braking system, a cool-to-touch glass door, and a flashing door light and audible alert. It comes with (4) Grab n Go wire racks and has a stainless steel interior and exterior. The oven is engineered and assembled in the USA and is NSF/ANSI 4 and cULus certified.

The oven has several standard features including an all stainless steel cavity, top, and sides, as well as being fully insulated. It has a halogen door light behind a heat reflective inner glass and machine diagnostics that can be accessed through the controls or via USB. The oven is engineered and assembled in Louisville, Kentucky, USA. The ABC-P models include a food probe and fan speed control. It comes with a one-year limited parts and labor warranty (two years for K-12). The oven also has a visual recall display of the actual temperature and humidity LED's.

The oven has a timer that reloads for batch cooking after the completion of a timed cycle. It has just three knobs for temperature, time, and humidity control, with no modes. The glass door is cool to the touch and energy efficient, and it has a flashing door light and audible alarm system to alert the user when the cooking cycle is finished. The oven also has a patent-pending humidity level control that automatically adjusts after setting the temperature. It comes with (4) stainless steel Grab-n-Go Racks with a cutout design for easy access to pans.

The oven is boilerless and uses direct steam creation to optimize cooking capability and production with minimal energy and water consumption. It has multiple cooking capabilities including baking, steaming, roasting, air-frying, rethermalization, proofing, finishing, poaching, stewing, low temperature cooking, and defrosting. The oven has large LED displays for temperature, time, and humidity controls. The humidity range is 0-100% and the temperature range is 80-450°F. The timer range is continuous up to 23:59 hours and minutes.
