The Combi Oven/Steamer is an electric, boilerless oven with a capacity of (7) 18" x 26" full size sheet or (14) 12" x 20" full size hotel pans. It features three knobs with LED displays for temperature, timer, and humidity control. The humidity automatically adjusts with temperature selection, and there is a food probe included. The oven also has an auto-reversing fan with speed control and an electronic braking system. The glass door is cool to touch and has a flashing light and audible alert when the cooking cycle is finished. The oven comes with four Grab n Go wire racks and has a stainless steel interior and exterior. It is engineered and assembled in the USA and is NSF/ANSI 4 and cULus certified. 

Standard features include an all stainless steel cavity, top, and sides, as well as full insulation. There is a halogen door light behind a heat reflective inner glass. Machine diagnostics can be accessed through the controls or via USB. The oven is engineered and assembled in Louisville, Kentucky, USA. ABC-P models include a food probe and fan speed control. The oven comes with a one-year limited parts and labor warranty (two years for K-12). There is a visual recall display of the actual temperature and humidity LED's. The oven has an auto-reversing fan with an electronic braking system on the fan motor. The timer reloads for batch cooking after the completion of a timed cycle. There are only three knobs for temperature, time, and humidity control. The glass door is cool to the touch and energy efficient. It has multiple cooking capabilities, including baking, steaming, roasting, air-frying, rethermalization, proofing, finishing, poaching, stewing, low temp cooking, and defrosting.
