This is a commercial blast chiller and freezer that also functions as a thawing cabinet, retarder/proofer, slow cooker/warmer, and reach-in unit. It has self-contained refrigeration and can hold up to (12) 18" x 26" x 1" pans with a shelf spacing of 2.56". It has the capability to chill 200 lbs. of food from 194°F to 37°F in 90 minutes and freeze 140 lbs. of food from 194°F to 0°F in 240 minutes. It comes with (1) core temperature probe and an electronic control with an LCD temperature display. It also has HACCP monitoring, a printer, a safety micro-switch, programmable controls, and an RS 485 connection. It requires manual defrosting and has bottom mount refrigeration. The unit is made of stainless steel and has adjustable feet. It has a 4 HP motor and is UL and cUL certified. (There are also other commercial blast freezers available.)
