The Turbofan® proofer cabinet and holding cabinet has a capacity for 8 full-size sheet pans with 3" tray spacing. It features a mechanical thermostat with a temperature range of 65-185°F and humidity level control. The cabinet has an off/proof/hold mode selection and an auto water fill system. It is made of stainless steel both on the interior and exterior, with a glass door. The cabinet is equipped with 3" casters, two of which have locks. It is cETLus and NSF certified. Other mobile heated holding and proofing cabinets and food holding and warming equipment are also available.
